A hearty ground beef soup that is easy to make and full of flavor.
Ingredients

- 1 pound ground beef
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 can diced tomatoes
- 1 cup green beans, chopped
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion, carrots, and celery. Cook until softened.
- Add minced garlic and cook for 1 minute.
- Add ground beef and cook until browned.
- Stir in beef broth, diced tomatoes, green beans, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Serve hot.
Notes
- Adjust seasoning to taste.
- Add more vegetables if desired.
- Store leftovers in the refrigerator for up to 3 days.
