- 1 cup sushi rice
- 2 cups water
- 1/4 cup rice vinegar
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 4 sheets nori (seaweed)
- 1/2 cucumber, julienned
- 1/2 avocado, sliced
- 4 ounces cooked shrimp or crab
- Edible eyes for decoration
Instructions
- Rinse the sushi rice under cold water until the water runs clear.
- Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer’s instructions.
- In a small bowl, mix rice vinegar, sugar, and salt until dissolved.
- Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture.
- Allow the sushi rice to cool to room temperature.
- Lay a sheet of nori on a bamboo sushi mat, shiny side down.
- Spread a thin layer of sushi rice over the nori, leaving a small border at the top.
- Arrange cucumber, avocado, and shrimp or crab in a line along the bottom edge of the rice.
- Roll the sushi tightly from the bottom, using the mat to help shape it.
- Seal the edge of the nori with a little water.
- Slice the sushi roll into bite-sized pieces.
- Use additional nori to cut out spider shapes and place them on top of the sushi pieces for decoration.
