- 1 medium sugar pumpkin
- 1 lb ground turkey or beef
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 cup bell peppers, chopped
- 1 cup onions, chopped
- 2 cloves garlic, minced
- 2 tbsp chili powder
- 1 tsp cumin
- Salt to taste
- Pepper to taste
- Toppings: sour cream, cheese, cilantro
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the top off the sugar pumpkin and scoop out the seeds and stringy insides.
- In a large pot, brown the ground turkey or beef over medium heat.
- Add the chopped onions, bell peppers, and minced garlic to the pot and sauté until softened.
- Stir in the chili powder, cumin, salt, and pepper.
- Add the diced tomatoes and black beans to the pot, mixing well.
- Allow the chili to simmer for about 30 minutes to meld the flavors.
- Spoon the chili mixture into the hollowed-out pumpkin.
- Place the pumpkin in a baking dish and bake for 30-40 minutes until the pumpkin is tender.
- Remove from the oven and let cool slightly before serving.
- Garnish with sour cream, cheese, and cilantro as desired.
