A hearty and comforting ham and bean soup recipe.
Ingredients

- 1 lb ham, diced
- 1 cup dried white beans, soaked overnight
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 tsp thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a large pot, sauté onion, carrots, and celery until soft.
- Add garlic and cook for another minute.
- Stir in ham and cook for 5 minutes.
- Add soaked beans, broth, thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1.5 hours.
- Remove bay leaf before serving.
Notes
- Soaking beans overnight reduces cooking time.
- Use leftover ham for extra flavor.
- This soup freezes well.
