Description
A hearty ham and potato soup made in a crockpot.
Ingredients

- 2 cups diced ham
- 4 cups diced potatoes
- 1 cup chopped onions
- 1 cup diced carrots
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cloves minced garlic
- Salt to taste
- Pepper to taste
- 1 teaspoon dried thyme
Instructions
- Add ham, potatoes, onions, and carrots to the crockpot.
- Pour in the chicken broth and add garlic, salt, pepper, and thyme.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, stir in the heavy cream.
- Adjust seasoning if needed and serve hot.
Notes
- For extra flavor, add a bay leaf while cooking.
- Garnish with chopped parsley before serving.
