  • 1 cup fresh strawberries, sliced (for decoration)
  • 1 cup whipped cream (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with milk. Mix until just combined.
  6. Divide the batter evenly between the prepared cake pans.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  9. Once cooled, frost the top of one cake layer with whipped cream, add sliced strawberries, and place the second layer on top.
  10. Frost the top and sides of the cake with whipped cream. Decorate with additional strawberries and edible flowers if using.
  11. Slice and serve to celebrate Mother’s Day!

Notes

  • For a chocolate version, substitute 1 cup of flour with cocoa powder.
