- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 cup unsalted butter, softened
- 4 large eggs
- 1 cup milk
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 cup fresh strawberries, sliced (for decoration)
- 1 cup whipped cream (for frosting)
- Edible flowers (for decoration, optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with milk. Mix until just combined.
- Divide the batter evenly between the prepared cake pans.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
- Once cooled, frost the top of one cake layer with whipped cream, add sliced strawberries, and place the second layer on top.
- Frost the top and sides of the cake with whipped cream. Decorate with additional strawberries and edible flowers if using.
- Slice and serve to celebrate Mother’s Day!
Notes
- For a chocolate version, substitute 1 cup of flour with cocoa powder.
- You can add a layer of jam between the cake layers for extra flavor.
- Try using different fruits based on your mother’s favorite flavors.
