Ingredients

Scale
  • 1 (30 oz) bag frozen hashbrowns, thawed
  • 1 cup sour cream
  • 1 can (10.5 oz) cream of chicken soup
  • 2 cups shredded cheddar cheese
  • 1/2 cup chopped onion
  • 1/4 cup melted butter
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup crushed cornflakes (optional for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the thawed hashbrowns, sour cream, cream of chicken soup, cheddar cheese, chopped onion, melted butter, garlic powder, salt, and black pepper. Mix well until fully combined.
  3. Pour the mixture into a greased 9×13 inch baking dish, spreading it evenly.
  4. If desired, sprinkle the crushed cornflakes on top for added crunch.
  5. Bake in the preheated oven for 45-50 minutes, or until the casserole is bubbly and golden brown on top.
  6. Remove from the oven and let it cool for a few minutes before serving.

Notes

  • For a spicier kick, add diced green chilies to the mixture.
  • You can substitute the cream of chicken soup with cream of mushroom soup for a vegetarian option.
  • Leftovers can be stored in the refrigerator for up to 3 days.
