Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1 cup pineapple chunks
  • 1 red bell pepper, sliced

Instructions

  1. In a bowl, mix pineapple juice, soy sauce, brown sugar, garlic, and ginger.
  2. Place chicken breasts in a resealable bag and pour half the marinade over them. Seal and refrigerate for 30 minutes.
  3. Heat a skillet over medium-high heat and cook chicken for 5-6 minutes per side until browned.
  4. Whisk cornstarch and water into the remaining marinade.
  5. Pour marinade into the skillet, add pineapple chunks and bell pepper.
  6. Cook for 5-7 minutes until sauce thickens and chicken is cooked through.

  • Serve over rice or with steamed vegetables.
