- 2 lbs boneless, skinless chicken thighs
- 1 cup pineapple chunks
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1/2 tsp black pepper
Instructions
- Preheat oven to 400°F.
- Mix soy sauce, brown sugar, olive oil, garlic, ginger, and black pepper in a bowl.
- Toss chicken thighs in the marinade and let sit for 10 minutes.
- Arrange chicken, pineapple, and bell peppers on a sheet pan.
- Pour remaining marinade over the ingredients.
- Bake for 25 minutes or until chicken reaches 165°F internally.
- Serve hot.

- Use fresh pineapple for best results.
- Adjust sugar to taste.
- Marinate longer for deeper flavor.
