Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1 cup pineapple chunks
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 400°F.
  2. Mix soy sauce, brown sugar, olive oil, garlic, ginger, and black pepper in a bowl.
  3. Toss chicken thighs in the marinade and let sit for 10 minutes.
  4. Arrange chicken, pineapple, and bell peppers on a sheet pan.
  5. Pour remaining marinade over the ingredients.
  6. Bake for 25 minutes or until chicken reaches 165°F internally.
  7. Serve hot.
