Ingredients

  • 3 ripe bananas, mashed
  • 1/4 cup honey or maple syrup
  • 1/4 cup plain Greek yogurt
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup rolled oats
  • 1 cup whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix mashed bananas, honey, yogurt, egg, and vanilla.
  3. In another bowl, combine oats, flour, baking soda, cinnamon, and salt.
  4. Add dry ingredients to wet ingredients and mix until just combined.
  5. Fold in nuts if using.
  6. Pour batter into the loaf pan and bake for 45-50 minutes or until a toothpick comes out clean.
  7. Let cool before slicing.
