Ingredients

- 1 pound boneless, skinless chicken breasts, cubed
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup low-sodium chicken broth
- 1 cup unsweetened almond milk
- 1 pound whole wheat gnocchi
- 2 cups fresh spinach
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chicken cubes and cook until browned, about 5 minutes. Remove and set aside.
- In the same skillet, sauté onion and garlic until softened.
- Add chicken broth, almond milk, and thyme. Bring to a simmer.
- Stir in gnocchi and cook according to package instructions.
- Return chicken to the skillet and add spinach. Cook until spinach is wilted.
- Season with salt and pepper. Serve immediately.
Notes
- Use fresh gnocchi for the best texture.
- You can substitute spinach with kale or any other leafy greens.
- Store leftovers in an airtight container for up to 3 days.
