Ingredients

  • 1 pound boneless, skinless chicken breasts, cubed
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 cup unsweetened almond milk
  • 1 pound whole wheat gnocchi
  • 2 cups fresh spinach
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken cubes and cook until browned, about 5 minutes. Remove and set aside.
  3. In the same skillet, sauté onion and garlic until softened.
  4. Add chicken broth, almond milk, and thyme. Bring to a simmer.
  5. Stir in gnocchi and cook according to package instructions.
  6. Return chicken to the skillet and add spinach. Cook until spinach is wilted.
  7. Season with salt and pepper. Serve immediately.
