Ingredients

- 2 boneless, skinless chicken breasts (cooked and diced)
- 1 medium apple (chopped)
- 1 cup mixed greens (spinach, arugula, or lettuce)
- 2 tbsp Greek yogurt (plain)
- 1 tsp Dijon mustard
- 1 tsp honey
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 whole wheat tortillas (large)
Instructions
- In a bowl, mix Greek yogurt, Dijon mustard, honey, salt, and pepper.
- Add diced chicken and chopped apple. Toss gently to coat.
- Lay a tortilla flat and spread half the chicken-apple mixture in the center.
- Top with mixed greens.
- Fold the sides of the tortilla inward, then roll tightly from the bottom.
- Repeat for the second wrap. Slice in half and serve.
Notes
- Use rotisserie chicken for quicker prep.
- Substitute yogurt with light mayo if preferred.
- Add nuts (walnuts, almonds) for extra crunch.
