Ingredients

  • 2 boneless, skinless chicken breasts (cooked and diced)
  • 1 medium apple (chopped)
  • 1 cup mixed greens (spinach, arugula, or lettuce)
  • 2 tbsp Greek yogurt (plain)
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 whole wheat tortillas (large)

Instructions

  1. In a bowl, mix Greek yogurt, Dijon mustard, honey, salt, and pepper.
  2. Add diced chicken and chopped apple. Toss gently to coat.
  3. Lay a tortilla flat and spread half the chicken-apple mixture in the center.
  4. Top with mixed greens.
  5. Fold the sides of the tortilla inward, then roll tightly from the bottom.
  6. Repeat for the second wrap. Slice in half and serve.
