Ingredients

  • 1 lb chicken breast, diced
  • 1 package (16 oz) gnocchi
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1/2 cup low-sodium chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced chicken and cook until browned, about 5-6 minutes.
  3. Stir in garlic and cook for 1 minute until fragrant.
  4. Add gnocchi and cook for 2-3 minutes, stirring occasionally.
  5. Pour in chicken broth and bring to a simmer.
  6. Add cherry tomatoes, spinach, basil, salt, and pepper. Cook until spinach wilts, about 2 minutes.
  7. Sprinkle with Parmesan cheese and serve warm.
