- 8 oz whole wheat pasta
- 2 boneless, skinless chicken breasts, cubed
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cherry tomatoes, halved
- 2 cups baby spinach
- 1/4 cup grated parmesan cheese
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add chicken and cook until no longer pink, about 6-8 minutes.
- Add garlic, oregano, basil, salt, and pepper. Stir for 1 minute.
- Add cherry tomatoes and spinach. Cook until spinach wilts, about 2 minutes.
- Combine chicken mixture with cooked pasta. Toss well.
- Top with parmesan cheese before serving.
Notes
- Use gluten-free pasta if needed.
- Add red pepper flakes for extra heat.
- Substitute kale for spinach if preferred.
