  • 1 cup low-sodium chicken broth
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian herbs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Fresh parsley for garnish

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add the mixed vegetables on top of the chicken.
  3. In a bowl, combine the chicken broth, minced garlic, dried herbs, salt, pepper, olive oil, and lemon juice. Mix well.
  4. Pour the mixture over the chicken and vegetables in the crockpot.
