Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa with 4 cups of water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Fluff quinoa with a fork and let it cool.
  5. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, and feta cheese.
  6. Add cooled quinoa to the vegetable mixture.
  7. Drizzle olive oil and lemon juice over the salad.
  8. Season with salt and pepper. Toss to combine.
  9. Serve chilled or at room temperature.
