Ingredients

- 2 cups quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa with 4 cups of water. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Fluff quinoa with a fork and let it cool.
- In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, and feta cheese.
- Add cooled quinoa to the vegetable mixture.
- Drizzle olive oil and lemon juice over the salad.
- Season with salt and pepper. Toss to combine.
- Serve chilled or at room temperature.

- This dish can be made ahead of time.
- Feel free to add your favorite vegetables.
- Can be served with grilled chicken or fish for added protein.
