Ingredients

  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup dried fruit (raisins, cranberries, or chopped dates), optional

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine rolled oats, chopped nuts, seeds, salt, and cinnamon.
  3. In a separate bowl, whisk together honey (or maple syrup), melted coconut oil, and vanilla extract.
  4. Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
  5. Spread the mixture evenly on a baking sheet lined with parchment paper.
  6. Bake for 25-30 minutes, stirring halfway through, until golden brown.
  7. Remove from the oven and let it cool completely. Stir in dried fruit if using.
  8. Store in an airtight container at room temperature for up to 2 weeks.
