- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 15 minutes or until quinoa is fluffy.
- In a bowl, mix cherry tomatoes, cucumber, and bell pepper.
- In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Add cooked quinoa to the vegetable mix and pour dressing over it.
- Toss everything together and serve.

- This meal is versatile; you can add your favorite vegetables.
- Store leftovers in the fridge for up to 3 days.
