Ingredients

  • 1 cup quinoa, rinsed and drained
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until quinoa is fluffy and water is absorbed.
  2. Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork and allow to cool.
  3. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, parsley, and feta cheese.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. Add the cooled quinoa to the vegetable mixture and drizzle with dressing. Toss to combine.
  6. Serve immediately or refrigerate for up to 2 days.
