A refreshing and nutritious quinoa salad packed with vegetables and a light lemon dressing. Perfect for a quick lunch or dinner.
Ingredients

- 1 cup quinoa, rinsed and drained
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled (optional)
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until quinoa is fluffy and water is absorbed.
- Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork and allow to cool.
- In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, parsley, and feta cheese.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Add the cooled quinoa to the vegetable mixture and drizzle with dressing. Toss to combine.
- Serve immediately or refrigerate for up to 2 days.
