Instructions
- Rinse quinoa under cold water.
- Cook quinoa in boiling water for 15 minutes.
- In a pan, heat olive oil and sauté garlic until fragrant.
- Add spinach and cook until wilted.
- Mix cooked quinoa with spinach, cherry tomatoes, lemon juice, salt, and pepper.
- Top with feta cheese before serving.
