Ingredients

- 1 cup rolled oats
- 1 large apple, grated
- 1 medium carrot, grated
- 1 egg
- 1/2 cup milk
- 2 tbsp honey
- 1 tsp cinnamon
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- 1 tbsp melted butter or coconut oil
Instructions
- Preheat oven to 350°F (175°C). Grease a small baking dish.
- In a bowl, mix oats, grated apple, grated carrot, and cinnamon.
- In another bowl, whisk egg, milk, honey, vanilla, and melted butter.
- Combine wet and dry ingredients.
- Pour mixture into the baking dish and bake for 30-35 minutes until set and golden.
- Let cool slightly before serving.
Notes
- Use old-fashioned oats for best texture.
- Adjust sweetness by adding more or less honey.
- Store leftovers in the fridge for up to 3 days.
