Description
A fresh and healthy pasta salad filled with vegetables and light dressing.
Ingredients

- 8 oz whole grain pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup black olives, sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and cool.
- In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, bell pepper, red onion, and black olives.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the pasta salad and toss well.
- Garnish with feta cheese before serving.
Notes
- Chill for 30 minutes before serving for better flavor.
- Use any vegetables you prefer.
- This salad keeps well in the fridge for 2-3 days.
