Ingredients

- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 avocado, sliced
- 1/2 cup quinoa, cooked
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Wash and dry the mixed greens.
- Prepare the quinoa according to package instructions.
- In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, and bell pepper.
- Add the cooked quinoa and sliced avocado to the bowl.
- Sprinkle feta cheese on top.
- Drizzle olive oil and lemon juice over the salad.
- Season with salt and pepper.
- Toss gently to combine all ingredients.
