- 2 cups vegetable broth
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup diced tomatoes
- 1 cup chopped spinach
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, heat the vegetable broth over medium heat.
- Add chopped carrots and celery. Cook for 5 minutes.
- Add diced tomatoes and garlic powder. Stir well.
- Simmer for 10 minutes.
- Add chopped spinach, onion powder, salt, and pepper. Cook for another 5 minutes.
- Serve hot.

- Store leftovers in the refrigerator for up to 3 days.
- This soup can be frozen for up to 2 months.
