Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups spinach
  • 1 cup quinoa, rinsed
  • Juice of 1 lemon

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened.
  3. Add garlic and cook for another minute.
  4. Add zucchini and bell pepper. Stir well.
  5. Pour in vegetable broth and diced tomatoes.
  6. Add oregano, salt, and pepper. Bring to a boil.
  7. Add quinoa and reduce heat. Simmer for 15 minutes.
  8. Stir in spinach and lemon juice. Cook for 2 more minutes.
  9. Serve hot.

Notes

  • Adjust seasoning to taste.
  • Store leftovers in the refrigerator.
