  • 2 cups spinach

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened.
  3. Stir in garlic, zucchini, and bell pepper. Cook for another 5 minutes.
  4. Add diced tomatoes, vegetable broth, thyme, basil, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Add spinach and cook for an additional 5 minutes.
  7. Serve hot.
