- 8 oz whole wheat pasta
- 2 cups corn kernels (fresh or frozen)
- 1/4 cup plain Greek yogurt
- 2 tbsp mayonnaise
- 1 lime (juiced)
- 1/2 tsp chili powder
- 1/4 tsp smoked paprika
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped cilantro
- 1/4 cup diced red onion
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and rinse under cold water.
- In a large bowl, mix Greek yogurt, mayonnaise, lime juice, chili powder, and smoked paprika.
- Add cooked pasta, corn, feta cheese, cilantro, and red onion to the bowl.
- Toss well to coat evenly. Season with salt and pepper.
- Chill for at least 30 minutes before serving.
