- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup diced bell peppers
- 1 cup chopped spinach
- 1 can black beans, rinsed
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 15 minutes.
- In a separate pan, sauté bell peppers and spinach until soft.
- Add black beans, cumin, salt, and pepper to the vegetables.
- Combine cooked quinoa with the vegetable mixture.
- Serve warm.

- This dish can be served hot or cold.
- Store leftovers in an airtight container in the fridge.
