Instructions
- Season the chicken breasts with garlic powder, paprika, black pepper, and salt.
- Heat olive oil in a skillet over medium heat and cook the chicken until golden brown on both sides, about 5-6 minutes per side. Remove and set aside.
- In the same skillet, add chopped vegetables and sauté for 3-4 minutes.
- Add brown rice and chicken broth to the skillet. Stir to combine.
- Place the chicken breasts on top of the rice mixture. Cover and simmer for 25-30 minutes, or until the rice is cooked and the chicken reaches an internal temperature of 165°F.
