A hearty and comforting dish of tender beef and noodles in a rich broth.
Ingredients

- 1 lb beef stew meat, cubed
- 8 oz egg noodles
- 4 cups beef broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 stalks celery, sliced
- 1 tbsp vegetable oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 bay leaf
Instructions
- Heat oil in a large pot over medium heat.
- Add beef and brown on all sides, about 5 minutes.
- Add onion, garlic, carrots, and celery. Cook for 3 minutes.
- Pour in beef broth and add thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Add noodles and cook for 8-10 minutes until tender.
- Remove bay leaf before serving.
Notes
- You can use leftover roast beef instead of stew meat.
- For a thicker broth, mix 1 tbsp cornstarch with 2 tbsp water and stir in before adding noodles.
- Store leftovers in an airtight container for up to 3 days.
