Description
A comforting and hearty beef stew served in bread bowls for a complete meal.
Ingredients

- 1.5 lbs beef stew meat, cubed
- 2 tbsp olive oil
- 1 onion, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup red wine (optional)
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 4 round bread bowls
Instructions
- Heat olive oil in a large pot over medium heat.
- Brown the beef cubes on all sides, then remove and set aside.
- Add onions, carrots, and garlic to the pot. Cook until softened.
- Stir in tomato paste, thyme, and rosemary.
- Return beef to the pot. Add beef broth and red wine.
- Bring to a boil, then reduce heat and simmer for 1.5 hours.
- Add potatoes and cook for another 30 minutes.
- Season with salt and pepper.
- Hollow out bread bowls and fill with stew.
Notes
- For a thicker stew, mix 1 tbsp flour with water and stir in before serving.
- Replace red wine with more broth if preferred.
- Use crusty bread like sourdough for best results.
