Ingredients

  • 1.5 lbs beef stew meat, cubed
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine (optional)
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 4 round bread bowls

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Brown the beef cubes on all sides, then remove and set aside.
  3. Add onions, carrots, and garlic to the pot. Cook until softened.
  4. Stir in tomato paste, thyme, and rosemary.
  5. Return beef to the pot. Add beef broth and red wine.
  6. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  7. Add potatoes and cook for another 30 minutes.
  8. Season with salt and pepper.
  9. Hollow out bread bowls and fill with stew.

Notes

  • For a thicker stew, mix 1 tbsp flour with water and stir in before serving.
  • Replace red wine with more broth if preferred.
  • Use crusty bread like sourdough for best results.
