Ingredients

  • 2 lbs beef stew meat, cubed
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 4 cups beef broth
  • 1 cup red wine (optional)
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Brown the beef cubes on all sides, then remove from the pot.
  3. Add onions and garlic, sauté until softened.
  4. Return beef to the pot. Add carrots, potatoes, beef broth, red wine (if using), tomato paste, thyme, and rosemary.
  5. Bring to a boil, then reduce heat to low and simmer for 2 hours, stirring occasionally.
  6. Season with salt and pepper before serving.

Notes

  • For a thicker stew, mix 1 tbsp flour with 2 tbsp water and stir into the stew before simmering.
  • Leftovers taste even better the next day.
