Ingredients

- 2 lbs beef stew meat, cubed
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 4 cups beef broth
- 1 cup red wine (optional)
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Brown the beef cubes on all sides, then remove from the pot.
- Add onions and garlic, sauté until softened.
- Return beef to the pot. Add carrots, potatoes, beef broth, red wine (if using), tomato paste, thyme, and rosemary.
- Bring to a boil, then reduce heat to low and simmer for 2 hours, stirring occasionally.
- Season with salt and pepper before serving.
Notes
- For a thicker stew, mix 1 tbsp flour with 2 tbsp water and stir into the stew before simmering.
- Leftovers taste even better the next day.
- Freeze portions for quick meals later.
