- 1 lb beef stew meat, cubed
- 1 tbsp olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup green beans, trimmed and cut
- 1 cup potatoes, diced
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef cubes and brown on all sides. Remove and set aside.
- In the same pot, sauté onion, carrots, and celery until softened.
- Add garlic and cook for 1 minute.
- Return beef to the pot. Pour in beef broth and diced tomatoes.
- Add green beans, potatoes, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1 hour or until beef is tender.
- Serve hot.
Notes
- For extra flavor, use homemade beef broth.
- You can add other vegetables like corn or peas if desired.
- Store leftovers in the fridge for up to 3 days.
