Ingredients

  • 1 lb beef stew meat, cubed
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup green beans, trimmed and cut
  • 1 cup potatoes, diced
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef cubes and brown on all sides. Remove and set aside.
  3. In the same pot, sauté onion, carrots, and celery until softened.
  4. Add garlic and cook for 1 minute.
  5. Return beef to the pot. Pour in beef broth and diced tomatoes.
  6. Add green beans, potatoes, thyme, salt, and pepper.
  7. Bring to a boil, then reduce heat and simmer for 1 hour or until beef is tender.
  8. Serve hot.
