Ingredients

- 200g chocolate cookie crumbs
- 100g melted butter
- 500g cream cheese
- 150g sugar
- 3 eggs
- 200g sour cream
- 1 tsp vanilla extract
- 200g cherries (pitted)
- 50g dark chocolate (shaved)
Instructions
- Preheat oven to 160°C.
- Mix cookie crumbs with melted butter and press into a springform pan.
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each.
- Stir in sour cream and vanilla extract.
- Pour the filling over the crust.
- Bake for 50 minutes.
- Cool completely before topping with cherries and chocolate shavings.
Notes
- Use room temperature cream cheese for smoother blending.
- Chill the cheesecake for at least 4 hours before serving.
- Fresh cherries can be substituted with canned ones.
