Ingredients

  • 2 lbs beef spare ribs
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 cup beef broth
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Season the beef spare ribs with salt and pepper.
  2. Heat olive oil in a large pot over medium-high heat. Brown the ribs on all sides, then remove and set aside.
  3. In the same pot, sauté onion, garlic, carrots, and celery until softened.
  4. Stir in tomato paste, thyme, rosemary, and bay leaf. Cook for 1 minute.
  5. Return the ribs to the pot. Pour in beef broth, cover, and simmer on low heat for 2.5–3 hours until tender.
  6. Remove bay leaf before serving.

Notes

  • For deeper flavor, marinate ribs overnight.
  • Serve with mashed potatoes or crusty bread.
