- 2 lbs beef spare ribs
- 1 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 cup beef broth
- 1 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Season the beef spare ribs with salt and pepper.
- Heat olive oil in a large pot over medium-high heat. Brown the ribs on all sides, then remove and set aside.
- In the same pot, sauté onion, garlic, carrots, and celery until softened.
- Stir in tomato paste, thyme, rosemary, and bay leaf. Cook for 1 minute.
- Return the ribs to the pot. Pour in beef broth, cover, and simmer on low heat for 2.5–3 hours until tender.
- Remove bay leaf before serving.
Notes
- For deeper flavor, marinate ribs overnight.
- Serve with mashed potatoes or crusty bread.
