- 2 boneless, skinless chicken breasts
- 1 cup orzo pasta
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 lemon, juiced and zested
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh thyme, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups chicken broth
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken with salt and pepper, then cook for 5-6 minutes per side until golden brown.
- Remove chicken and set aside.
- In the same skillet, sauté garlic for 30 seconds.
- Add orzo and stir to coat with oil.
- Pour in chicken broth, lemon juice, and zest. Bring to a boil.
- Reduce heat, cover, and simmer for 10 minutes until orzo is tender.
- Return chicken to the skillet and sprinkle with fresh herbs.
- Cook for another 2-3 minutes to warm the chicken.
- Serve immediately.

- Adjust lemon to taste.
- Chicken broth can be substituted with vegetable broth.
