Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh thyme, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups chicken broth

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken with salt and pepper, then cook for 5-6 minutes per side until golden brown.
  3. Remove chicken and set aside.
  4. In the same skillet, sauté garlic for 30 seconds.
  5. Add orzo and stir to coat with oil.
  6. Pour in chicken broth, lemon juice, and zest. Bring to a boil.
  7. Reduce heat, cover, and simmer for 10 minutes until orzo is tender.
  8. Return chicken to the skillet and sprinkle with fresh herbs.
  9. Cook for another 2-3 minutes to warm the chicken.
  10. Serve immediately.
