Ingredients

  • 1 whole chicken (about 45 lbs)
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • 1 lemon, quartered
  • 4 cloves garlic, smashed
  • Fresh herbs (such as thyme and rosemary) for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels and place it in a roasting pan.
  3. In a small bowl, mix together olive oil, salt, pepper, garlic powder, onion powder, thyme, and rosemary.
  4. Rub the herb mixture all over the chicken, including under the skin and inside the cavity.
  5. Stuff the cavity with lemon quarters and smashed garlic cloves.
  6. Tie the legs together with kitchen twine and tuck the wing tips under the chicken.
  7. Roast the chicken in the preheated oven for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  8. Let the chicken rest for 15 minutes before carving.
  9. Garnish with fresh herbs and serve.
