- 1 whole chicken (about 4–5 lbs)
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 2 teaspoons dried thyme
- 2 teaspoons dried rosemary
- 1 lemon, quartered
- 4 cloves garlic, smashed
- Fresh herbs (such as thyme and rosemary) for garnish
Instructions
- Preheat the oven to 425°F (220°C).
- Pat the chicken dry with paper towels and place it in a roasting pan.
- In a small bowl, mix together olive oil, salt, pepper, garlic powder, onion powder, thyme, and rosemary.
- Rub the herb mixture all over the chicken, including under the skin and inside the cavity.
- Stuff the cavity with lemon quarters and smashed garlic cloves.
- Tie the legs together with kitchen twine and tuck the wing tips under the chicken.
- Roast the chicken in the preheated oven for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 15 minutes before carving.
- Garnish with fresh herbs and serve.
