Ingredients

- 1 lb (450g) chicken breast, sliced
- 2 cups mixed vegetables (bell peppers, broccoli, carrots)
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1 tablespoon cornstarch
- Salt and pepper to taste
- Cooked brown rice or quinoa for serving
Instructions
- In a bowl, mix the sliced chicken with cornstarch, salt, and pepper. Set aside.
- Heat olive oil in a large skillet over medium-high heat.
- Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes.
- Add minced garlic and ginger, and sauté for an additional minute.
- Add the mixed vegetables and soy sauce, stir-frying until the veggies are tender, about 3-5 minutes.
- Serve hot over cooked brown rice or quinoa.
Notes
- Feel free to use any vegetables you have on hand.
- Adjust soy sauce to taste for more or less saltiness.
- This dish can be made in bulk and stored for meal prep.
