A comforting and hearty chicken noodle soup made from scratch with simple ingredients.
Ingredients

- 1 tbsp olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 6 cups chicken broth
- 2 cups water
- 1 lb boneless chicken breast or thighs
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 2 cups egg noodles
- 1/4 cup fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook for 5 minutes until softened.
- Stir in garlic and cook for 1 minute.
- Pour in chicken broth and water, then add chicken, salt, pepper, and thyme.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Remove chicken, shred it, and return to the pot.
- Add egg noodles and cook for 8-10 minutes until tender.
- Stir in parsley and serve hot.
Notes
- Use rotisserie chicken for a quicker version.
- Store leftovers in the fridge for up to 3 days.
- Freeze without noodles for longer storage.
