- 1 box (about 1.75 oz) Liquid pectin
- 1/4 cup Lemon juice (Freshly squeezed)
- 1/2 cup Water
Instructions
- Prepare your jars by sterilizing them in boiling water for 10 minutes.
- In a large pot, combine the chopped fruit and water. Bring to a boil over medium heat, stirring frequently.
- Reduce heat and simmer for about 10-15 minutes, mashing the fruit as it cooks to release the juices.
- Strain the mixture through a fine mesh sieve or cheesecloth to extract the juice. You should have about 4 cups of juice.
- Return the juice to the pot and add lemon juice and sugar. Stir well and bring to a full rolling boil.
- Once boiling, add the liquid pectin and stir continuously for 1-2 minutes while boiling.
- Remove from heat and skim off any foam from the surface.
- Pour the hot jelly into the prepared jars, leaving about 1/4 inch headspace.
- Seal the jars with lids and process in a boiling water bath for 5-10 minutes.
- Let the jars cool to room temperature. Once cooled, check for proper sealing and store in a cool, dark place.
