  • 5 cups Granulated sugar (Adjust based on fruit sweetness)
  • 1 box (about 1.75 oz) Liquid pectin
  • 1/4 cup Lemon juice (Freshly squeezed)
  • 1/2 cup Water

Instructions

  1. Prepare your jars by sterilizing them in boiling water for 10 minutes.
  2. In a large pot, combine the chopped fruit and water. Bring to a boil over medium heat, stirring frequently.
  3. Reduce heat and simmer for about 10-15 minutes, mashing the fruit as it cooks to release the juices.
  4. Strain the mixture through a fine mesh sieve or cheesecloth to extract the juice. You should have about 4 cups of juice.
  5. Return the juice to the pot and add lemon juice and sugar. Stir well and bring to a full rolling boil.
  6. Once boiling, add the liquid pectin and stir continuously for 1-2 minutes while boiling.
  7. Remove from heat and skim off any foam from the surface.
  8. Pour the hot jelly into the prepared jars, leaving about 1/4 inch headspace.
  9. Seal the jars with lids and process in a boiling water bath for 5-10 minutes.
  10. Let the jars cool to room temperature. Once cooled, check for proper sealing and store in a cool, dark place.
