Description
This homemade strawberry jam is sweet, fruity, and bursting with flavor. Perfect for spreading on toast, adding to desserts, or simply enjoying by the spoonful!

- 2 pounds fresh strawberries, hulled and halved
- 1 cup granulated sugar
- 2 tablespoons lemon juice
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract (optional)
Instructions
- In a large bowl, mash the strawberries with a potato masher or fork until mostly smooth with some chunks.
- Transfer the mashed strawberries to a large saucepan and add the sugar, lemon juice, and salt. Stir to combine.
- Cook over medium heat, stirring frequently, until the mixture comes to a boil.
- Once boiling, continue to cook for about 10-15 minutes, stirring often, until the mixture thickens and reaches a temperature of 220°F (104°C).
- Remove from heat and stir in the vanilla extract if using.
- Carefully pour the hot jam into sterilized jars, leaving about 1/4 inch of headspace at the top. Seal with lids.
- Let the jars cool to room temperature, then refrigerate. The jam will thicken further as it cools.
Notes
- This jam can be stored in the refrigerator for up to 3 weeks.
- For longer storage, process the jars in a water bath canner for 10 minutes to seal them.
