Description
A comforting and hearty chicken noodle soup made with tender chicken and fresh vegetables.
Ingredients
Scale
- 1 whole chicken (about 3–4 pounds)
- 8 cups of water
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 onion, chopped
- 3 cloves of garlic, minced
- 8 ounces egg noodles
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped
Instructions
- In a large pot, add the chicken and cover with water.
- Bring to a boil and then reduce heat. Simmer for 1 hour.
- Remove the chicken and set aside to cool.
- Add carrots, celery, onion, and garlic to the pot. Cook for 15 minutes.
- While vegetables cook, shred the chicken, discarding skin and bones.
- Add egg noodles and shredded chicken to the pot.
- Season with salt, pepper, and parsley. Cook until noodles are tender.
- Serve hot.
Notes
- For richer flavor, use homemade chicken broth.
- Store leftovers in the refrigerator for up to 3 days.
