Description

A comforting and hearty chicken noodle soup made with tender chicken and fresh vegetables.


Ingredients

  • 1 whole chicken (about 34 pounds)
  • 8 cups of water
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 8 ounces egg noodles
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a large pot, add the chicken and cover with water.
  2. Bring to a boil and then reduce heat. Simmer for 1 hour.
  3. Remove the chicken and set aside to cool.
  4. Add carrots, celery, onion, and garlic to the pot. Cook for 15 minutes.
  5. While vegetables cook, shred the chicken, discarding skin and bones.
  6. Add egg noodles and shredded chicken to the pot.
  7. Season with salt, pepper, and parsley. Cook until noodles are tender.
  8. Serve hot.

  • For richer flavor, use homemade chicken broth.
  • Store leftovers in the refrigerator for up to 3 days.
