Ingredients

  • 1 lb (450g) boneless, skinless chicken breasts
  • 1 cup (240ml) honey BBQ sauce
  • 2 cups (480ml) chicken broth
  • 1 cup (200g) long-grain rice
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Season chicken breasts with garlic powder, onion powder, salt, and pepper.
  2. Add chicken to the skillet and sear for 5-7 minutes on each side or until cooked through and golden brown.
  3. Remove chicken from the skillet and set aside. In the same skillet, add chicken broth and bring to a simmer.
  4. Stir in the rice, then return the chicken to the skillet. Pour honey BBQ sauce over the chicken and rice.
  5. Cover and reduce heat to low. Cook for 20 minutes or until rice is tender and has absorbed the liquid.
  6. Fluff the rice with a fork, then slice the chicken and serve over the rice. Garnish with chopped green onions if desired.

Notes

  • Feel free to add vegetables like bell peppers or broccoli for added nutrition.
  • You can use leftover chicken or rotisserie chicken for a quicker version.
