- 1 lb (450g) boneless, skinless chicken breasts
- 1 cup (240ml) honey BBQ sauce
- 2 cups (480ml) chicken broth
- 1 cup (200g) long-grain rice
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Chopped green onions for garnish (optional)
Instructions
- In a large skillet, heat olive oil over medium heat. Season chicken breasts with garlic powder, onion powder, salt, and pepper.
- Add chicken to the skillet and sear for 5-7 minutes on each side or until cooked through and golden brown.
- Remove chicken from the skillet and set aside. In the same skillet, add chicken broth and bring to a simmer.
- Stir in the rice, then return the chicken to the skillet. Pour honey BBQ sauce over the chicken and rice.
- Cover and reduce heat to low. Cook for 20 minutes or until rice is tender and has absorbed the liquid.
- Fluff the rice with a fork, then slice the chicken and serve over the rice. Garnish with chopped green onions if desired.
Notes
- Feel free to add vegetables like bell peppers or broccoli for added nutrition.
- You can use leftover chicken or rotisserie chicken for a quicker version.
