- 1 lb (450g) boneless, skinless chicken thighs
- 1/4 cup honey
- 2 tablespoons sriracha sauce
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
- Salt and pepper to taste
- 2 cups cooked rice
- 1 cup steamed broccoli
- 1/2 cup sliced green onions
- Sesame seeds for garnish
Instructions
- In a medium bowl, whisk together honey, sriracha, soy sauce, rice vinegar, sesame oil, garlic powder, and ginger powder until well combined.
- Season chicken thighs with salt and pepper, then place them in a large zip-top bag or bowl. Pour the marinade over the chicken, ensuring it is well coated. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
- Preheat a grill or grill pan over medium-high heat. Remove chicken from the marinade and discard the marinade.
- Grill the chicken for about 5-7 minutes per side, or until cooked through and no longer pink in the center. Let the chicken rest for 5 minutes before slicing.
- To assemble the bowls, divide cooked rice among serving bowls, top with sliced chicken, steamed broccoli, and sprinkle with green onions and sesame seeds. Drizzle with additional sriracha if desired.
Notes
- Feel free to substitute chicken thighs with chicken breasts if preferred.
- Adjust the amount of sriracha based on your spice tolerance.
