Ingredients

  • 1 lb (450g) boneless, skinless chicken thighs
  • 1/4 cup honey
  • 2 tablespoons sriracha sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • Salt and pepper to taste
  • 2 cups cooked rice
  • 1 cup steamed broccoli
  • 1/2 cup sliced green onions
  • Sesame seeds for garnish

Instructions

  1. In a medium bowl, whisk together honey, sriracha, soy sauce, rice vinegar, sesame oil, garlic powder, and ginger powder until well combined.
  2. Season chicken thighs with salt and pepper, then place them in a large zip-top bag or bowl. Pour the marinade over the chicken, ensuring it is well coated. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  3. Preheat a grill or grill pan over medium-high heat. Remove chicken from the marinade and discard the marinade.
  4. Grill the chicken for about 5-7 minutes per side, or until cooked through and no longer pink in the center. Let the chicken rest for 5 minutes before slicing.
  5. To assemble the bowls, divide cooked rice among serving bowls, top with sliced chicken, steamed broccoli, and sprinkle with green onions and sesame seeds. Drizzle with additional sriracha if desired.

Notes

  • Feel free to substitute chicken thighs with chicken breasts if preferred.
  • Adjust the amount of sriracha based on your spice tolerance.
