Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1/2 cup walnuts
  • 1/2 cup sugar
  • 1/4 cup honey
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 tablespoon water
  • 1/4 teaspoon salt
  • Vegetable oil for frying
  • Cornstarch for coating shrimp

Instructions

  1. In a saucepan, combine sugar and 1/2 cup water over medium heat. Bring to a boil and add walnuts. Cook for 2-3 minutes until the syrup thickens. Remove walnuts and place on parchment paper to cool.
  2. In a bowl, mix mayonnaise, honey, lemon juice, and salt to create the honey sauce. Set aside.
  3. Coat the shrimp in cornstarch, shaking off excess.
  4. In a skillet, heat vegetable oil over medium-high heat. Fry shrimp until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
  5. In a large bowl, toss the fried shrimp with the honey sauce until evenly coated. Add the candied walnuts and mix gently.
  6. Serve immediately, garnished with additional walnuts if desired.

Notes

  • For extra crunch, double fry the shrimp.
  • You can substitute walnuts with pecans if desired.
  • Serve over steamed rice or alongside stir-fried vegetables.
