- 4 cod fillets, skinless
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lemon, sliced
- Fresh parsley, for garnish
Instructions
- Pat the cod fillets dry with a paper towel and season both sides with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Once the oil is hot, add the cod fillets to the skillet.
- Cook the fillets for about 4-5 minutes on each side, or until they are golden brown and cooked through.
- During the last minute of cooking, add lemon slices to the skillet to caramelize.
- Remove the fillets from the skillet and place them on a serving plate.
- Garnish with fresh parsley and serve with the caramelized lemon slices.
