  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 large eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the diced onion and garlic, sautéing until fragrant and the onion is translucent.
  3. Stir in the mixed vegetables and cook for 2-3 minutes until heated through.
  4. Push the vegetable mixture to one side of the skillet. Pour the beaten eggs into the other side and scramble until fully cooked.
  5. Add the cooked rice to the skillet, breaking up any clumps. Stir everything together.
  6. Pour the soy sauce and sesame oil over the rice, mixing well to combine. Season with salt and pepper to taste.
  7. Cook for an additional 2-3 minutes, allowing the rice to get slightly crispy.
  8. Garnish with chopped green onions before serving.
