A quick and easy fried rice recipe that you can customize with your favorite vegetables and proteins.

- 2 cups cooked rice (preferably day-old)
- 2 tablespoons vegetable oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 large eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Green onions, chopped (for garnish)
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the diced onion and garlic, sautéing until fragrant and the onion is translucent.
- Stir in the mixed vegetables and cook for 2-3 minutes until heated through.
- Push the vegetable mixture to one side of the skillet. Pour the beaten eggs into the other side and scramble until fully cooked.
- Add the cooked rice to the skillet, breaking up any clumps. Stir everything together.
- Pour the soy sauce and sesame oil over the rice, mixing well to combine. Season with salt and pepper to taste.
- Cook for an additional 2-3 minutes, allowing the rice to get slightly crispy.
- Garnish with chopped green onions before serving.
Notes
- Feel free to add cooked chicken, shrimp, or tofu for extra protein. Customize with your favorite vegetables.
