Instructions
- Preheat your oven to 200°F (93°C).
- In a small oven-safe pot or Dutch oven, combine the peeled garlic cloves and olive oil. Make sure the garlic is fully submerged in the oil.
- Add salt and any fresh herbs if using.
- Cover the pot with a lid or aluminum foil and place it in the preheated oven.
- Cook for 1 hour, or until the garlic is soft and lightly golden.
- Remove from the oven and let it cool slightly.
- Transfer the garlic confit along with the oil to a clean jar. Store in the refrigerator for up to 2 weeks.
