- 1 lemon, halved

Instructions
- Preheat your oven to 425°F (220°C).
- Remove the giblets from the chicken cavity.
- Pat the chicken dry with paper towels.
- Rub olive oil over the entire chicken.
- Season with salt and pepper inside and out.
- Stuff the cavity with lemon halves, garlic, and herbs.
- Place the chicken in a roasting pan breast side up.
- Roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 10-15 minutes before carving.
