Ingredients

  • 1 cup fresh huckleberries
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or grease it with cooking spray.
  2. In a large bowl, whisk together the flour, sugar, salt, baking powder, and baking soda.
  3. In a separate bowl, mix together the melted butter, egg, milk, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the huckleberries.
  5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Huckleberries can be substituted with blueberries if unavailable.
  • For an extra touch, sprinkle a little sugar on top of the muffins before baking.
